According to Mythbusters and Wikipedia:
"they concluded that the caffeine, potassium benzoate, aspartame, and CO2 gas contained in the Diet Coke and the gelatin and gum arabic ingredients of the Mentos all contribute to the jet effect.[8] In addition, the MythBusters theorized that the physical structure of the Mentos is the most significant cause of the eruption due to nucleation"

Translation:

The shell on the mentos candy has tons of tiny little craters. When it is combined with the soda, all of the carbonated bubbles tend to gather in those craters and create a huge air-bomb.

Or at least that's what I was told.
