If bread goes into a toaster, and toast comes out of it, at what point in the toasting process does bread become toast?

As soon as the bread has undergone a change which cannot be reversed, i.e. the moment it has been toasted even slightly, it is classed as toast, but at the end of the day toast is still bread - it doesn't ever stop being bread, it's just a word we use for bread that has been grilled.

I think the bread becomes toast when you can smell the bread cooking, at that point it is turning to toast. lol.

When the bread has been 'toasted' sufficiently to your taste you have 'toast'.

As soon as any part of the bread has become chemically changed due to oxidation.
